Avocado egg rolls

We had egg rolls like this when we went out for Ryan's birthday dinner last year at BJ's. I've been wanting to make them ever since. Here is my best version:

Caramelize one red onion
Fill the egg roll pastry (pre-made from the grocery store) with sliced avocado, sun dried tomato, fresh basil (I used 1 1/2 leaves torn up and evenly distributed), and some of the caramelized onion.
When you have filled as many egg rolls as you desire, fry as directed on the package. Use tamarind, mango, or other sweet chutney as a dipping sauce.
